   <title>How to successfully store the top tier of wedding cake.</title>

   <description>Storing The Top Tier Of Wedding Cakes
The sweet tradition of celebrating your 1st 
anniversary by sharing the top tier of your 
wedding cake could turn sour if the cake isn&#39;t 
stored properly. No matter how fresh your romance 
remains, a stale cake is no way to remember that 
perfect wedding day. Just follow these simple tips 
to keep your cake as moist and delicious as 
possible. 

First, remove any ornaments or large breakable 
decorations. You may choose to leave certain 
smaller icing decorations on the cake to retain 
the charm of your original design. If the cake is 
resting on an unwrapped cake board, replace the 
board with one wrapped in foil. This will prevent 
a cardboard taste from seeping into the cake. If 
the cake is resting on a plastic separator plate, 
it&#39;s fine to leave that on when freezing. Next, 
place the cake in the freezer for about 20 
minutes. This will firm up the icing and prevent 
it from adhering to the wrap.

Now you&#39;re ready to wrap the cake. Completely 
cover the cake with plastic wrap, making sure to 
wrap airtight. Follow by wrapping with at least 2 
layers of heavy duty aluminum foil. The more 
protection you give the cake, the less chance of 
freezer taste or freezer burn. If desired, you can 
also place the cake in a storage container.

One day before your 1st anniversary, begin 
defrosting the cake in your refrigerator. After 
about 2 hours, remove the cake from its wrapping 
and continue to defrost. Just before serving, let 
the cake rest at room temperature.

   <description>This was my first chocolate fondant 3 tier cake, 
and it turned out great.  They requested the 
botton 2 tiers be fake, and planned on cutting 
the top cake for pictures.  Then I made sheet 
cakes that were cut and served to their guests.  
They wanted the wedding cake to have the look of 
fondant for pics, but they wanted the cake and 
icing to taste great for their guests.</description>

   <title>Denton Wedding</title>

   <description>This was a beautiful wedding site at the 
Butterfly House in Chesterfield, MO.  Julie 
wanted a 3 tier stacked cake with alternating 
shapes.  She chose chocolate cake with fudge 
filling, and white cake with fudge filling.  
Thank goodness she was using buttercream icing 
which usually holds up pretty good in the heat 
with it being a July Wedding!</description>

   <title>Weiss Birthday Party Cake</title>

   <description>She wanted a birthday cake with a roller skate on 
it for her son&#39;s 10th birthday party.  So I made 
a chocolate cake and etched out the cake design 
to make it stand out more.  I also wanted the 
wheels to stand out from the cake so I used a 
large marshmellow for the wheels.</description>

   <title>The Johnson &amp; Janik Wedding</title>

   <description>This past weekend, Oct. 13th, I did a wedding cake 
and groom&#39;s cake.  The wedding cake was a square 
stacked cake with a fuchsia band around the base 
of each tier, and placed on a silver square 
plateau.  The bottom tier was a white cake with 
raspberry filling, the middle tier was a chocolate 
cake, and the top tier was a white cake.

The groom&#39;s cake was a coconut cake decorated to 
look like a golf course.  I used a round silver 
plateau to give the cake a more decorative look.

Anyone that attended the reception and either saw 
or tasted either of these cakes are welcome to 
comment below.

   <title>Diabetic Pumkin Cake, &amp; Yellow Cake Reviews</title>

   <description>Recently I was asked to make a diabetic cake.  I 
had not done this before. I was sure with all the 
recipes on the internet I could find a good one.  
However, all the recipes I found said they were 
for diabetics, but reviewing the ingredients I 
found all of them to have some form of sugar or 
were high in carbs.  So I created a few of my own 
recipes and so far have had good reviews.  I am 
hoping to expand the list of choices in the next 
few months.</description>
